little extra effort but worth it

I do a lot of baking so the extra steps in preparation don't thwart me. I love these light gingery muffins. They are worth the extra steps.

Gingery Muffins

This is one less than 5 stars because it takes time to zest lemon, and melt the ginger and sugar. It took me 25 minutes to mix and put in the oven. Watch while melting the sugar, because it can quickly burn. The recipe yields 12 muffins not 16, in a standard size muffin tin. The muffins are fine textured, and deliciously gingery. I shared with my choir director and a new neighbor and they were well received.
