Patience makes perfect

We made this for our New Year's Eve Dinner party and it was fabulous! The key is the stock-- I made it the night before and added onion, celery, and garlic. When ready to cook the risotto, give yourself plenty of time and perfection will be your reward! Will definitely make it again for another special occasion.

i disagree with the first review. it is imperative to make the lobster stock for this recipe and to season throughout making the risotto. it is very tasty if you do these two things. if you don't make the lobster stock, the lobster flavor will be lacking. also, my market was out of chervil when i made this dish on new year's day so i substituted tarragon and it worked great. the licorice flavor of the tarragon enhanced the flavor of the fennel and both paired well with the lobster.

This recipie really needs some work. I have never made a recipe from Williams Sonoma that was so disapointing. I was planning on preparing for Christmas Eve, so made a prep batch last weekend, glad that I did. Im looking elsewhere for a recipe- I wasnt aware that risotto could taste so bland.
