Lemon Risotto
This creamy risotto is especially good served with fish, such as our shrimp, scallops and stuffed squid (see related recipe at left). Be sure to add the lemon zest to the risotto at the end so its flavor will be fresh and bright; its volatile oils will quickly dissipate if warmed too long.

I had never made risotto before and was therefore a little anxious, but this recipe was foolproof and delish!! highly recommend it--worth every minute of time!

Risottos are a labour of love and our family favorite and we've found Williams-Sonoma's risotto recipes to be some of the best! Lemon risotto is one of our all time favorites and a great accompaniment for a variety of main courses because it's flavor doesn't compete but compliments. We'll sometimes eat it with just an arugula or mizuna salad.
