Layered Frittata
Inspired by the refined flavors of Nice, this frittata combines layers of tomatoes, Swiss chard, two kinds of cheeses and nicoise olives with beaten eggs to produce a beautiful and delicious dish.

Healthy weekend brunch recipe

My husband and I love this frittata and usually prepare it on the weekend and serve with a simple arugula salad (arugula tossed with salt, pepper, olive oil and lemon juice) and a side of meat (sausage or bacon). All the veggies make it fairly healthy and the 2 cheeses add richness. A few notes: this takes a while to prepare so I usually prep the night before (chop veggies and blanch chard); also, I typically use shredded parmesan instead of the provolone. A non-stick pan like the W-S frittata pan is a must.
Pros: Yield, Healthy, Appearance, Impressive, Will Make Again
Cons: Lengthy

I have made this three times. It has wonderful flavors going through it. It takes some time to prepare, but it is well worth it and is always a hit!

Excellent Breakfast Choice

I have prepared this frittata for weekend guests on several occasions. Each time has resulted in rave reviews and requests for the recipe. Not only does the unique combination of ingredients provide a memorable taste sensation, but the frittata is chock full of nutrition ! Requires a bit of prep but the whole thing pulls together easily and beautifully.
