Lancaster County Chicken-Corn Soup

In almost any American home, regardless of ethnic background, chicken soup enjoys a reputation as a preeminent comfort food. Whether embellished with noodles, egg yolk, grain, dumplings, matzo balls or a melange of seasonal vegetables, it soothes body and soul. This Pennsylvania Dutch soup gives fresh appeal to the venerable idea, enticing us with the fragrance of saffron and indulging us with a bounty of quick homemade noodles and summer-sweet corn. Not as heavy as some German-American dishes, it's still hearty, easily capable of supporting an extra handful or two of limas, sliced green beans, chopped spinach, or other vegetables from the garden or fridge.

Disappointed Pa Dutch

I have lived most of my life in South Central Pennsylvania and never had a bowl of chicken corn soup made with saffron. First off, it is too expensive a spice for any native born Pa Dutch to buy let alone use. Plus, its missing the potatoes and chopped, hard boiled eggs.

My Lancaster Husband Loved This

My husband was excited about the prospect of a homemade bowl of this soup which he recalled so fondly from his Lancaster boyhood, and he was not disappointed, devouring 3 bowls of it! He remembered his grandmother pulling off small pieces of the rivel dough by hand (instead of rolling and cutting the dough) dropping them into the soup and that they were like tiny dumplings. I used organic sweet white frozen corn Whole Foods brand and organic chicken breasts and thighs. Will make again. Homey, delicious, and relatively healthy, passing the authenticity test too.
