Low-Fat Key Lime Chiffon Pie

Egg whites stand in for the usual whipped cream, and nonfat condensed milk is used, transforming this version into a light chiffon pie that tastes, and looks, deliciously old-fashioned. Key limes are the size of a very large grape. Far more tart than Persian limes, they are hard to find fresh. Bottled Key lime juice, sold in some grocery stores and at specialty-food stores, works just as well.

Super Summer Dessert

I have made this recipe a half dozen times for varies dinner guests. I love it because I can get it ready ahead of time and it sets up beautifully and is a awesome tasting dessert. I use my isi whipped creamer and it gets rave reviews. Just one word of caution....besure you stir the mixture as it sits in fridge. I set my timer for ever 6-7 min and it turned out perfect with no lumps. I have used store crusts from time to time and they are excellent too - especially the vanilla crumb. A twist of lime sliced very thin makes a beautiful presentation.
