Individual Lemon Pudding Cakes

For this recipe, the egg whites should be whipped just until they form soft peaks that slump to one side when the beaters are lifted. To make a meringue, the egg whites need to be whipped longer, until they form stiff peaks that will stand upright. The eggs should still appear moist and satiny and not grainy-that is a sign of overwhipping.

The perfect summer dessert
August 31, 2011
I love this. I was not looking for a low-fat dessert actually it turned me off. But I decided to try and was so happy I did. Such a rich delicious texture! And the lemon flavor is just right.

Feh..Don't waste your time
July 23, 2011
What an absolute waste of time and ingredients!
I made this twice, thinking perhaps I did something wrong the first time, but nope...same disappointing result.
If you want to serve a lemon dessert, lemon cake or lemon bars are a better option. This was just really, really disappointing.
Cons: Taste, Lengthy

The BEST dessert!
March 10, 2011
I absolutely adore this recipe! It seems a little awkward the first time when pouring into the ramekins with all the chunks at the bottom, but it always works out perfectly- just distribute them equally the best you can. I love that there isn't any butter in them- and they are a perfect snack for later. I make them all the time and everyone is crazy about them, especially when they hear it's low fat!
