Honey-Raisin Bran Muffins

Wheat bran, the outer layer of grains of wheat, is a by-product of the flour-milling process. Although almost tasteless, fresh bran contributes a mild earthy flavor to muffins and other baked goods and is added to recipes along with flour to boost the fiber content and overall nutrition. Unprocessed wheat bran, which has not been toasted, is also packaged as miller's bran. Look for it in the cereal section of supermarkets or in natural-foods stores. Because bran is high in natural oils, it should be stored in the refrigerator to maintain freshness.

An Okay Bran Muffin

I expected these to be a little a sweeter for all the honey and brown sugar. A teaspoon of honey spread on the muffin improved it for me. Might need some tweaking but overall an okay bran muffin.

Excellent Bran Muffins

These bran muffins are delicious, and they make the house smell great. This recipe makes a lot of them.

BEST BRAN MUFFINS

Although these muffins weren't as healthy as I had hoped, with lots of honey and brown sugar they were amazingly delicious. I made a few changes to the recipe, I added a teaspoon of almond extract and substituted half of the all purpose flour with some whole wheat. After they came out of the oven I then spread some honey on the top of them while they were still warm giving it a nice glaze. We will definitely be making these again.
Think: healthy desert!
