Delicious and easy

Nothing could be simpler than preparing this dish and putting it into the rotisserie which does all the work. This recipe has a really delicious flavor and I've even tried it using the zest of an orange instead of a lemon. Both are wonderful. It has such a good flavor that any leftover chicken is cut up and used in a pasta dish a day or two later. Also, I take the leftover skin and bones and put them into a 31/2 quart saucepan, which I then fill with water and boil for approximately 30 minutes. After removing the chicken and bones, I'm left with a very good chicken stock which I use in other recipes.
