Our special blend of Mediterranean herbs, which includes sage, thyme and marjoram, adds distinctive flavor to this roast turkey. The breast is covered with cheesecloth and basted during roasting to help the bird stay moist and juicy.

Great Flavor!

This was my first turkey recipe and it got rave reviews. The end result is a flavorful juicy turkey!!!!!! I have made it at least 5 times since. I usually wind up doubling the basting sauce since it tends to evaporate during roasting. I also use a dry white wine instead of the maderia.

I have been making this turkey recipe for about 8 years. In fact, it is the ONLY recipe I have ever used. My husband and I came across it in a Williams Sonoma catalog when we lived out of town and decided to make our first ever Thanksgiving dinner on our own. It makes the moistest turkey that you have ever eaten and it is so easy. Rave reviews every time we serve it for the holidays. Recommend making a lot more basting sauce than it calls for...I probably triple the amount at least.

Best Turkey ever!
I've used this recipe for many years & the family is always impressed that the turkey looks beautiful and tastes great. But my cookbooks are in storage this year and I need the mushroom gravy that goes with the turkey. Can anyone supply??
