Waxy potatoes, such as red, Yukon Gold and fingerling, the variety used here, retain their shape during roasting and have a dense, creamy texture when cooked. If you are roasting the potatoes along with meat or poultry and the oven temperature is 25deg.F higher or lower to accommodate the meat, the potatoes will still roast fine.

Very easy for dinner party

This is a great recipe for a dinner party because the preparation is very easy and the potatoes cook on their own.

Very easy and delicious roasted potatoes

This recipe for roasted potatoes was delicious and super easy. The whole grain mustard really added some amazing flavor to the potatoes once they had roasted in the oven. I did not have any fresh rosemary, so all I used was salt, pepper, whole grain dijon mustard and some garlic. I highly recommend it!
