Prepared this recipe as written with a ham bone and some left overs. The aroma that filled my house was enough to justify making it. I added a crust of french bread and then the cheese... Amazing. One bowl was not enough.

Even Better than Expected!

I expected this soup to be good, but it turned out great. Couldn't find the escarole, so I used one bunch of red swiss chard. it looked like too much, but then it really cooked down. I ordered store cooked ham from the deli counter, and requested a 1/2 lb. cut in two slices. Diced that and was good to go.
Definately make this for a quick, cheap, weeknight meal. It goes great with the polenta bread recipe from this site.
