The empty tart shells can be baked the night before you serve them. Cover loosely with a towel or parchment paper and let stand at room temperature. The next morning, fill the shells as directed and bake.

Simple and Delicious

These tarts are simple to put together, quick to bake, and absolutely delicious! Since we don't like over-easy eggs at my house, I beat each egg lightly before pouring over the crust. Substituting bacon and chives for the ham and scallions is also scrumptious.

Perfect for a special breakfast

These recieved rave reviews from the family and I was asked to make another round (and found out that even if you overbake them a bit, they're still wonderful (although the egg yolk will set)).
