Grits Souffle with Greens and Sweet Onion

Grits, served with milk and butter, are a breakfast staple in much of the American South, and greens are on nearly every Southern table. Here, they are paired in a homey souffle flavored with two kinds of onions and two kinds of cheeses. This souffle will not rise as tall as its French namesake, but it will puff up and lighten in texture.

Great for weekend brunch

This is an easy but fun dish to serve at a brunch. It would work well for a luncheon as well. It is a little differnt than the standard egg dish. The green makes it pretty to serve with fresh fruit as a side dish.
