Grits Souffle with Greens and Sweet Onion

Grits, served with milk and butter, are a breakfast staple in much of the American South, and greens are on nearly every Southern table. Here, they are paired in a homey souffle flavored with two kinds of onions and two kinds of cheeses. This souffle will not rise as tall as its French namesake, but it will puff up and lighten in texture.
