Susy gave great advice - don't overcook the veggies! The first time I made this my zucchini came out soggy. Second time I learned my lesson. These vegetables are GREAT in a salad. The dressing and goat cheese add delicious flavor to a healthy dinner. I will be using this for more summers to come.

Great Variation on Roasted Veg

Loved this mix of Grilled Veg and Salad Greens!! Make sure the eggplant is THICK cut because it will mush if too thin and doesn't look very appetizing. All the grilling can be done in advance and mixed with the greens at the last minute. Next time I might add a grilled portobella mushroom...yum!!
