Grilled Eggplant, Red Pepper and Herbed Goat Cheese Sandwiches

Use any type of herbed fresh goat cheese you like. Or, you can make your own by mixing 3 Tbs. minced fresh chives, parsley, chervil, thyme or basil, or a mixture, into plain goat cheese.

Can't believe this didn't have any ratings. Made this tonight & it was a big hit even with my super picky part-time-only vegetarian DH! I made my own herbed goat cheese as recommended in the summary & added fresh basil, rosemary, thyme & chives- so good! Used the broiler method as it's too hot to grill in AZ. Served on ciabatta rolls. All the flavors melded together perfectly. The only thing I'll do different next time (yes, there will be a next time) is roast more red peppers- they definitely make this sandwich (& there was only enough for 2.5 sandwiches not 4)! Thank you WS for sharing this recipe, I am definitely keeping this in my rotation!
