Excellent Flavor in a Departure from Basil Pesto

While I agree with one of the other reviewers that this makes a better marinade than a stuffing, the flavor is fantastic. Very crisp and different from the heavier-tasting (although still delicious) basil pesto.
I have made this pesto with Romano cheese as well, and I think that softens the flavor of the arugula just a bit.
Our family has enjoyed this pesto not only on the chicken as suggested, but as a stand-alone spread for bread as well.
One word of caution: if you try this on an outdoor grill, you are in for some smoke as the olive oil cooks (I'm sure that was obvious to everyone but us . . . ). The recipe still works, but much neater on an indoor grill surface.

Disastorous recipe

My husband and I tried this recipe after seeing it in the W-S catalog. We were very disappointed and frustrated that after following the recipe to a tee (including using the immersion blender to the EXACT times) the pesto came out more like argula soup (completely liquid) than any resemblence to a pesto. It was completely unusable as a stuffing for the chicken. We then tried using it as a marinade to try to salvage the meal. However, it really gave the chicken little to no flavor. It was a disastorous disappointment, and we would not use this recipe again.

Perfect Lunch or Dinner!

This is a different and delicious way to prepare chicken for lunch or dinner. Replacing the traditional basil with arugula for the pesto sauce adds a piquant difference which is delicious and almost addictive! This is an economical and tasty dish to serve to guests or for a classy weeknight or weekend meal.
