Goat Cheese and Mesclun Salad

This classic salad, with its crisp goat cheese rounds, is a longtime restaurant standard. Look for a log-shaped fresh goat cheese, often simply labeled chevre, and use a sharp, thin-bladed knife to ensure neat rounds.

I've made this recipe for dinner parties as well as for a casual family dinner. It's easy and quick enough to slide right in, and it the presentation and taste makes it seem like something really special. The warm cheese warm and slightly wilts the greens, so delicious! I usually just use arugula, but that's because I've convinced myself that's what the recipe calls for and then that's what I buy at the store. But keep an eye on the cheese while it's baking. Things can go wrong real fast.
Pros: Easy, Quick, Impressive, Will Make Again, Appearance
Cons: can't walk away while it's in the oven
