Glazed Lemon Loaf

This moist lemon cake is satisfying on its own, but is heavenly topped with a mix of blueberries, blackberries and strawberries. Made without butter, and using just a fraction of the oil found in similar recipes, the cake keeps beautifully because it is bathed in tangy lemon syrup. It travels well, too, making it ideal for carrying to picnics and potlucks.

Quick & Easy

This recipe was super easy and quick!!!! I looked up the recipe last minute and had all ingredients on hand. Not only was it quick to whip together, but it was super moist and delicious. Not overly sweet or too lemony.
Pros: Quick, Good Value, Easy, Kid-Friendly, Will Make Again

Perfect for a Last Minute Desert!
March 18, 2011
I am by no means a baker, but this recipe went together so quickly and easily that I will be making it again and again. The glaze was the perfect bit of lemon tartness to balance the sweetness of the loaf. The ingredients are items I always have on hand and I especially love that it's part of my Essentials of Healthful Cooking cookbook, which makes me feel great about making a treat!
