Ginger Chicken and Green Onions

Lemongrass, a popular Asian ingredient, is available in many markets. Use only the bulb portion of the stalk and remove the tough outer layers before chopping. If you can't find lemongrass, you can substitute 1 Tbs. fresh lemon juice and 2 tsp. grated lemon zest. Add them along with the garlic and ginger.

Quick, easy, healthy, tasty!

We made this for dinner tonight. I added about a pound of sugar snap peas after the chicken was done cooking. Used 4 cubes frozen ginger, substituted lemon zest with 3 tbsp. lemon juice for the lemongrass, added a little soy sauce, and about a quarter of a cup of granulated sugar to thicken up the sauce. It was delicious over brown steamed rice. Served 4, with one helping of leftovers. Will for sure make again.

Easy and yummy

I made this dish for dinner last night and it was a hit at our dinner table. My favorite thing about it is that it is easy and quick which makes for a great week night dish.
