Fried Potato Salad

We put a new twist on the classic potato salad. The potatoes are cooked in a pressure cooker until almost tender, then fried in bacon fat until brown and crispy. A sprinkling of crumbled bacon adds a savory crunch. This hearty salad is the perfect partner for barbecued ribs or grilled meats.

My finicky 9yo came back for MORE

Just bought the Cuisinart Pressure Cooker and found this recipe. Tried it for my first pressure cooker experience. It was so good I immediately added it to my recipe file. The dressing has just the right amount of 'zing' to it and the crispiness of the potatoes is a nice change. I substituted tiny cubed pancetta for the bacon so I added a little butter to the potatoes as they were browning since I didn't have enough rendered fat. My 9 yo was buzzing around the kitchen and was hoping for 'basic' mashed potatoes. Despite her initial reluctance, she came back for seconds and then thirds.
Pros: Kid-Friendly, Appearance, Adaptable, Impressive, Will Make Again
Cons: time involved start to finish

This is the best potato salad recipe I have ever tried. This is also great for picnics and potlucks, because there is no mayonaise no need to worry about keeping it regrigerated. I have made this many times and receive compliments everytime it is made.

I have served this the past two Thanksgivings, and guests rave on and on about it! They almost seem to look forward to this more than the turkey! I have also found that the dressing is good on other dishes like smoked sausage and potatoes. I would recommend, though, to double the dressing. Thanks again WS for helping make people talk about my dishes ALL year!
