Fresh Spring Rolls with Hoisin-Peanut Dip (Goi Cuon)

When making these marvelous spring rolls, don't skimp on the aromatic herbs. The dipping sauce, called nuoc leo, uses hoisin sauce, a popular Chinese condiment.

Dipping sauce means "nuoc cham" (nước chấm) in Vietnamese, and there are variety of dipping sauces. Hoisin sauce is used mainly outside of Vietnam. In Vietnam dipping sauce for goi cuon is made with fish sauce. Nuoc leo is broth soup, used in noodle soup, e.g. pho.
