Flourless Chocolate Cake

Don't be fooled by the small size of this cake. It may measure only 1 1/2 inches high, but every bite is packed with intense chocolate flavor. Its texture is similar to a dense souffle with a soft, smooth center, but it's easier to make. A spoonful of snowy white whipped cream looks particularly appealing against the deep brown cake.

delious! dust with same cocoa

delicious! as with all chocolate cakes, i never dust with flour, always with the same cocoa in the recipe. I learned this from my dear Mother-in-law over 50 years ago! i also use espresso powder for the instant coffee from Williams Sonoma.

Great for Passover!

I've made this cake for Passover the last several years, and it's always a huge hit! It's pretty dense and rich, so a small piece is perfect, especially with some fresh strawberries.
I always adjust slightly though, as the first step for the "flourless" chocolate cake is to dust the inside of the pan with flour. Cooking spray or butter work just fine, and they keep the recipe flourless!

Holiday Dinner - added bonus Gluten Free

I made this for one of our Christmas dinner desserts and served it with sweetened whipped cream. It was rich and delicious. Two of our guests required gluten free - they loved it.
