Great winter soup!

I made this soup for a class I teach at a local Williams-Sonoma. The class participants loved it! Easy to put together. I used a little more pancetta than the recipe called for because, well, you can never have too much pancetta! I also served the soup with some grated parmesan. The next time I make this (which will be soon!), I will throw a rind of parmesan into the soup as it simmers for added flavor. I loved the spinach in the soup, but you could substitute whatever green you have available. Perfect for the New Year! Bon Appetit!

Simple but Good

Quick, easy and cheap to throw together. Although it wasn't the most flavorful soup I've made, the soup was very fresh tasting and surprisingly filling. It was a nice change of pace from holiday excess. The only thing I might change next time is to swap out the baby spinach for something heartier.
