Flank Steak, Arugula & Potato Salad

The potato salad may be prepared, without the chopped arugula, up to 1 day in advance. Cover and store in the refrigerator. Let the potato salad come to room temperature, then add the arugula just before serving.

This steak turned out so moist and tender. Super quick, no marinating required and little prep work. This is a great weeknight meal. The salad dressing is excellent.
Pros: Yield, Quick, Easy, Kid-Friendly, Healthy, Appearance, Impressive, Will Make Again

Great Salad

This is a great "fall" salad because it has the hearty meat and potatoes, but it still is relatively healthy. I made it for the first time over Thanksgiving and my husband said it was one of his favorite meals that I have made yet!!
