Orange, lime, jalapeno and cilantro add a quartet of bright, fresh tastes to this low-fat dish. Pacific cod, halibut or flounder would be excellent stand-ins for the salmon.

Amazing Taste, Quick To Make

This recipe is in my Healthful Cooking cookbook and I just made it for the first time last week. It was so incredibly easy to put together. I already had most of the ingredients in my kitchen and those that had to be bought were easy to find. This was a fast, affordable and healthy dinner that I will be making for my family again soon!
