Endive Chowder
This soup is similar to the French potage bonne femme, but the endive's bitterness gives the chowder's flavor a slight edge. The soup can be dressed up or down: Puree the vegetables for a sophisticated first course, or leave them chunky for a casual supper.

Surprisingly sophisticated

The first time I made this it was not so good, and I am not sure what the difference was this time but it was unbelievably delicious. I think the key is homemade chicken stock; since this is basically a root vegetable puree, it will taste bitter and bland without really good stock to balance it. I also cut out the core of the chicon (which can be bitter), added a parsnip, cut down on the amount of potato and went easy on the cream. I was too lazy to make the homemade croutons but I'm sure that would put it even more over the top. Great recipe, and very healthy.
