I prepared this recipe for Easter Brunch and noticed that the batter was quite thick for cupcake batter. The resulting cupcakes were heavy and dry -- so much so that I didn't bother to frost them and tossed them out after testing. Fortunately, I had a box of BC yellow cake mix on hand and quickly whipped up 2 dozen more which were moist and flavorful and everyone enjoyed.

Fun spring cupcake

I made these with my daughter and we had fun. A little difficult to get enough coconut to stick and also look pretty, but they were yummy. I would wait on placing the chocolate egg until just before eating because they absorb some of the moisture from the frosting. We would definitely make these again.
