Curry powder loses its flavor relatively quickly, so buy small amounts and discard any that sit on the shelf for longer than 6 months.

Impressive Soup!

This is an absolute favorite in my family -- once you do the prep, the process goes pretty quickly. Between the fresh corn, curry powder, and lemon juice, this soup is so wonderful - tons of flavor. Definitely top with a sliced lemon, adds a final kick of citrus. Hint: Definitely puree this to make it creamy and thick and remove the gummy skins from the corn kernels. Enjoy!
