We made this curry tonight and it was warming and satisfying. We used Madras curry powder, included the optional okra (which I highly recommend), and served over basmati rice. I used "No Chicken" broth (a chicken broth substitute), but next time I would just use the veggie broth as I am vegetarian.

Great easy recipe!

This was a very easy recipe to make and full of flavor. I didn't have okra so I substituted zucchini and it was very good. I used vegetable broth and tweaked the seasonings towards the end as suggested If using as leftovers, just add a little water to it when re-heating it. Perfect over rice or it could be eaten as a stew.
