Crown Roast of Pork with Calvados Sauce

Ask your butcher to tie the roast into a circle. Just before cooking, place a ball of foil in the center of the roast to help it hold its shape. The foil also distributes the heat as the meat roasts, promoting faster cooking. Serve the roast with our apple-pecan dressing, baby broccoli with garlic and root vegetable gratin with Gruyere (see related recipes at left).

AMAZING MEAL!!

I dont like pork, but this is the only pork I eat, I make this every New Years Day and have about 15 people over for dinner and EVERYONE loves it! Its unique and the Calvados sauce really brings out the flavor of the pork. Its not dry at all like pork can sometimes be. I follow the instructions to a T and its perfect everytime!

Impressive meal for a sit-down dinner. It looks like it takes a lot of effort, but is really easy and consistently comes out perfect....the apples keep the meat moist every time. The flavor of the Calvados sauce is to die for......like something out of a 5 star restaurant!
