Delicious Holiday Main Course

I made this crown roast for Christmas dinner too and everyone loved it! The stuffing recipe was delicious. I would say though that one should watch the cooking time to be sure the inner area of the roast is fully cooked as you cannot see it due to the stuffing. I had to add in time because my roast was larger. I used a different brine recipe than the one listed. I also made golden paper frills for the bone tops and they looked wonderful.
Pros: Appearance, Impressive, Will Make Again
Cons: extra care to not undercook

COMPLETELY RUINED MY CHRISTMAS DAY DINNER!

I have been loyal to William Sonoma for over 22 years. All holiday dinners made with there recipes. Reviews from Family and Friends always exceptional. This recipe called for 9 cups of Kosher salt for the brine. I questioned the amount but had a 8 pd roast vs the 5 pd in the recipe. Had 2 other family members view the amount(because it was such a large amount). After brining (over 24 hrs.) rinsed with water as instructed. Well my expensive ($100.00) roast was so overpowering with saltiness, no one was able to eat it! A complete embarrassment, waste of money and my time.

Excellent Holiday Dinner

I made this recipe for Christmas Eve this year. The only thing that I might change, add spices such as sage, thyme or rosemary to dressing. But that would only be a personal choice. One may not want the dressing to taste like "turkey dressing", so the above recipe is a pleasant change. The temperature of starting at 400 degrees and dropping back to 350 degrees, is a great way to cook this "Impressive roast". Best Christmas recipe I have ever done..
