Tasty, Versatile, Simple and Elegant!

This recipe gave me one more reason to love my panini maker and another reason to make this recipe over and over. The flavors of the dijon, bechamel sauce and gruyere fitted so well with the slices of ham, you just couldn't imagine it tasting any better. However, when the poached egg was added and the smoothy richness began oozing down the crunchy batard, it brought the entire taste to another level. The slight spiciness of the bechamel sauce truly complemented the ham. This was so easy to prepare at the last minute for friends that were coming over. They were very happily surprised and loved every bite. I especially liked how this recipe recommended canola oil to brush the bread instead of butter so that you could focus on tasting the goodness inside. Just a warning when adding the kosher salt, black pepper and cayenne--don't go overboard and be sure to taste it before adding more. I did it per the recipe and it was perfect! I can’t wait to try this open-faced at my next brunch.
