Perfect for Brunch

I made these crepes for Mother's Day a couple of years ago, and people still remember them! I am going to make them again for Mother's Day brunch this year. They are simple and fabulous! Preparing the batter beforehand is great...you can clean up your kitchen before company arrives. Pair these with some bacon, a potato galette, coffee, and OJ, and you will have a fantastic brunch!

So easy a husband can make it

I have made this twice now, for my wife, for special occasions. I most recently made it for Mother's Day.
I blindly trusted the recipe and was pleasantly surprised that all aspects worked. After blending the flour, etc. I was worried that it was too watery (because I'm used to pancake batter), but it was perfect. The recipe doesn't say what pan to use, but I used a 10" frying pan and it was just right.
Also, I thought that ricotta cheese and sugar didn't sound very good together, but it was creamy and great -- even using low-fat ricotta. I used fresh strawberries, but I think this would have still been good if I had used frozen berries (thawed). Oh yeah, I also drizzled a little pure maple syrup (just because I love maple syrup).
I was able to give my wife an extra special breakfast ... and she even bragged about it to her friends.
