These crispy fritters are the perfect accompaniment to our Bourbon and Black Pepper Braised Short Ribs (see related recipe at left). For optimum flavor and texture, serve the fritters immediately after cooking.

I have been making these fritters for the past 2 summers, when fresh Ohio corn is at its peak. It does require more steps than a typical vegetable pancake but the results have been tasty.

Quick and easy Corn Fritters

Fixed the Corn Fritters with fish and also BBQ Ribs. Easy to prepare and made a great hit!. I added some cayenne for alittle zip. They are best when warm.
