Icing Flop

The cake is easy to make - although tastes rather bland on its own. The icing recipe makes WAY too much for the cake. The icing is the texture of melted marshmellow - very goooey and sticky. I think the cake would be much better with a different icing - something with a fluffier texture - and richer coconut flavour.

A bit of a disappointment

So, I was really looking forward to making this (for my boyfriend!), and when the day came, I excitedly set myself to the task. The cake part was easy enough to bake, but it came out a little bland. The custard was divine, but the icing was another story...
I have to admit, I've never made "seven-minute frosting" before, but this was the most disgusting icing I've ever made! I think the recipe called for too much corn syrup and sugar - it was so glossy and sweet! And, on top of that, the measurements yielded just wayyy to much icing all together.
I would perhaps make this again, with adjustments to the icing (oooh, what about a chocolate ganache and coconut frosting?) and the batter (it was too bland), because the cake really does come out looking beautiful (minus the excessive glossiness.)

Special Occasion Cake

I took this to our Family Easter Dinner and there was none left to take home. I followed the recipe exactly and it came out perfectly. The filling has just the right amount of tartness. It is a beautiful cake and well worth the extra time in preparation.
