Classic Roast Chicken

Roast chicken is a wonderful supper centerpiece, and it is also great the next day. Here, you roast 2 birds so that you will have dinner for one night plus leftovers for making other delicious meals (see related recipes at left).To store the second chicken, let it cool, then remove the meat from the bones, discarding the skin and carcass. If you have pieces left from the first chicken, remove the meat from them as well. Shred the meat and store in an airtight container or resealable plastic bag in the refrigerator for up to 3 days.

Easy and rather delicious

Nice easy recipe. I put garlic, rosemary & a tablespoon of olive oil in the food processor and then rubbed it on the bird, along with a generous amount of salt & pepper. I also put an entire sprig of rosemary inside the bird. Everyone enjoyed it and many thanks to sparklecat03 for the cooking time and temperature adjustment.
We liked the sauce too! I am happy to say there have been very few recipes from this site that didn't turn out wonderfully.

Great chicken

The blend of herbs and the sauce are delicious! I make this chicken all the time. A word of warning - it will never get done properly at 450 for 20 minutes then 400 for 40 minutes. All the chicken recipes on this site say to do that, but you really should do 325 for 2 - 2.5 hours.

Excellent Roast Chicken!!

This is such an easy and flavorful roast chicken recipe. You can use any mix of herbs you like. I do like the mix of rosemary and tarragon, but have also used thyme, basil etc. It's good even without the pan sauce. If you make the sauce, be sure to use a low salt chicken broth. Definitely make the two chickens, you will want the leftovers!
