Cinnamon-Sugar Pillows

Dusted with cinnamon sugar, these puffy treats are perfect for breakfast or brunch. They are best served hot, so as you fry the pillows, keep them warm in the oven while you cook the remaining dough.

This recipe is easy to follow. I didn't give the recipe five stars because it should be enhanced with a little flavoring like vanilla or your favorite extract. You can go green by foregoing the plastic wrap instructions and covering your dough with a clean dish towel.

So light and addicting. Could picture myself sitting in the French Quarter eating these with coffee.

Not sure who's heard of the famous sopapillas of New Mexico, some regions of texas too. I've eaton them there and made them too. I tried this recipe, and the recipe is the same! they are just as delicious as the ones I make, and have had when I go to New Mexico. wow! I make these when I have a little extra time at home.
