Chocolate Souffle

Souffles are spectacular and surprisingly easy to make. At author Maria Sinskey's house, a chocolate souffle, still dangerously hot from the oven, is pounced on and quickly devoured with big scoops of vanilla ice cream. Just make sure your kids do not burn their tongues. You can assemble this souffle up to 4 hours in advance and let it sit at cool room temperature until it goes into the oven.

Baking time?

I have made this recipe 3 times now and it always falls out the side and burns the top. After reading many other souffle recipes I think the biggest problem is that the baking instructions say to cook 15 min @ 425 then 400 for 25-30. Not sure if it is supposed to say 25-30 more minutes or total cooking time. I will try again tonight. I'll lower the baking rack in the oven and try to cook for a total of 30 min. I'll let you know how it turns out.
Pros: Will Make Again, tastes great!
Cons: Confusing, burns on top

I've made this recipe several times and it has been delicious every time. You have to make sure your oven is hot when you put it in, and don't over mix the ingredients.
Best made with Green and Black's Chocolate...

Okay but.....

This recipe was fairly easy for my first attempt for a souflle, but the biggest problem that I ran into was after the recipe has me bake it for 15 min it was already burning and the recipe still had me baking it for another 20 min at least. I did position it in the middle of the oven and everything. Wasn't to thrilled. But everyone said it tasted good....thanks to the vanilla ice cream.
