Chocolate Mousse

Chocolate mousse is almost a synonym for French dessert. Unfortunately, one often finds poor imitations of the real thing in France and elsewhere. The styles range from gooey to firm. This version falls into the latter group. If you like, garnish it with chocolate shavings.

I have been making this recipe for years. It is easy and not too time consuming - perfect when prepared the day before. Top with fresh whipped cream and berries.

Do not waste your time...

and perfectly good ingredients on this recipe. The egg yolks cooked and curdled with the melted chocolate and butter, even though the water was just barely simmering - just as written in the recipe. The end result was a lumpy goop. The only one happy was the dog, who got the beaten egg whites.

Whisk constantly
Hi Daunbe66 - I also had that problem the first few times, but if you whisk constantly and quickly you should have no problem. I also sometimes will use my handheld mixer in the double boiler, which does wonders. Don't give up on this recipe yet - it's one of my favorites! Good luck.
