You can cook the lobster and remove the meat up to a day in advance. Place the meat in an airtight container and refrigerate. The lobster-mango molds can be prepared 30 minutes in advance; refrigerate until ready to serve.

I wanted to entertain some special guests for lunch and chose this salad. It is simply exquisite. I bought uncooked lobster tails (I can't bear cooking something alive) and the price almost made me fall over, and cooked it according to the instructions. The end result was a superb, very fancy, salad with a spectacular presentation.
