Mildly hot, ancho chili powder lends fruity sweetness to these roasted pork tenderloins. Anchos, which are dried poblano chilies, are the most commonly used chili pepper in traditional Mexican cuisine.

Salsa is the best part!
August 6, 2012
I love this recipe! The dry rub on the pork is amazing and paired with the salsa, this dish is fabulous. The pork to salsa ratio is a little off -- we always end up with a lot of left over salsa, which we devour with chips.
Pros: Will Make Again

This is an incredibly easy and fast recipe to prepare and the salsa is just divine. If you don't prefer the onions raw, you can saute them slightly and the sauce becomes sublime.
