Chicken with Peanut Sauce

Many kinds of dried Asian noodles need to be reconstituted in hot water before they can be eaten. Place the noodles in a large bowl, add hot water to cover, place a plate on top of the noodles to keep them submerged and set aside for 15 minutes.

Great yummy peanut sauce. Very easy to make once the chicken is cooked. A great recipe for left-over cooked-chicken from day before. Very simple. I added red pepper and was even better. I would serve this over white rice substituted for rice noodles.
