Chicken Hash

A combination of finely chopped meat, potatoes, vegetables and seasonings, hash makes a satisfying main course for breakfast or brunch. Here, we form the hash into patties and fry them until golden brown. If desired, top each patty with a Poached Egg and serve with our Cheddar-Bacon Biscuits (see related recipes at right).

Disappointing Outcome

I made this for a very special breakfast. One ingredient ruined the entire dish. The potatoes shouldn't be mashed (milk & butter added). The line should read "2 cups potatoes, mashed."
The way I interpreted the recipe made them too soft and they fell apart. They tasted pretty good, but the presentation was very disappointing.
I'll try them again. Hopefully, they'll turn out a lot better next time.

Quick dinner but, even better as left overs

I have had this recipe for a while and decided to use it as a quick meal. I had a roll of ground chicken and used it in this recipe. It turned out great. I served it with couscous and strands of zucchini and yellow squash. A couple of days later, I reheated the patties and I could tell all of the ingredients had all meshed together and the flavor made them much more tastier!
