Chicken Fricassee with Dumplings

A family favorite

This is like no chicken and dumplings I ever had. My family begs for this dish the minute it gets cooler out. I will tell you that I halve the leeks and double the broth and apple juice as well as double the dumplings. We serve this with mashed potatoes and green veggies and it's a hit every time. The dumplings are the best and they are always consumed quickly.

A BIT BLAND

I'd try this recipe again just to perfect it. But, it tasted a bit bland. I've 3 cloves of garlic & thyme because the only spice was dill. I was a bit disappointed with its flavor. Otherwise my dish looked like the picture.

This recipe was a little more "grown up" than the kind my mom use to make. I have three children and they all liked it. That's a keeper in my house.

I made a huge pot anticipating leftovers, well the delicious smells wafting from the kitchen kept them coming back for more. While it may seem a little intimidating after reading the recipe, do all your prep and the end result is just divine. This really is wonderful when allowed to simmer for awhile it helps meld together all the flavors. Deeply satisfying to your palate-kids liked it too!
