Chicken & Mango Salad

To prepare a mango, first peel it using a vegetable peeler or paring knife. Then, stand the mango on one of its narrow edges and use a sharp knife to cut down along one side of the stem end, just grazing the pit. Repeat on the other side. Cut each half into slices. Slice off any flesh left clinging to the pit.

perfect for a party

I made this for a girls tennis party and everyone loved it. It can be made ahead of time and arranged before serving. I cut back a little on the oil and didn't add the chili oil. Also I used a chunky mango chutney. This was a big hit and is so refreshing on a hot summer day!
