Celery Root and Carrot Salad with Creamy Dressing

This crisp, refreshing salad is best made a day ahead so that the flavors have a chance to develop fully. Celery root is a rather ungainly vegetable with a rough exterior that must be peeled away with a sharp knife. The flavor is similar to that of stalk celery. This recipe is an adaptation of the classic French salad, celeri-rave remoulade.

I made this tonight....in the past have made a similar recipe with apples instead of carrots...like it much better
