Cheap, delicious and great for weight loss

I make this on the weekends in the winter and freeze portions of it. I take it to work for lunch and after a week of so of eating soup for lunch, I have lost five pounds! It tastes just as good making it with pre-peeled carrots and purchased stock and saves a lot of time. This is a fall/winter staples for me.

I followed the recipe and butter gave the soup a wonderful flavor but the secontd time I made this soup I did not used butter and it was also delicious. I used a little bit of coconut oil instead.
