Carrot-Ginger Soup

A slow-simmered stock and fresh, firm carrots deliver a bright orange pureed soup with an intense sweet flavor, complemented by orange zest. The sweet onion, ginger and garlic contribute pungency to the finished soup, while the starchy nature of the carrots delivers a pleasing spoon-coating consistency.

Cheap, delicious and great for weight loss

I make this on the weekends in the winter and freeze portions of it. I take it to work for lunch and after a week of so of eating soup for lunch, I have lost five pounds! It tastes just as good making it with pre-peeled carrots and purchased stock and saves a lot of time. This is a fall/winter staples for me.

I followed the recipe and butter gave the soup a wonderful flavor but the secontd time I made this soup I did not used butter and it was also delicious. I used a little bit of coconut oil instead.
