Serve these individual tarts with a dollop of fromage blanc that has been spiked with sugar, vanilla extract and chopped fresh mint. Garnish with mint sprigs, if desired.

a little time consuming but yummy

for simplicity, i just cut the phyllo into squares. i also used dried blueberries since i coudnt find currants. taste was great, like little apple pies
