Capellini with Fresh Tomatoes and Basil

Also known as angel hair pasta, capellini is at its best tossed with a simple sauce of chopped fresh tomatoes, basil and fruity extra-virgin olive oil.

Great recipe with my own personal tweak

Love this. To take it up a notch, use grape tomatoes halved, small fresh mozzarella and kalamata olives. Marinate in mixture of Olive oil and red wine vinegar at room temp for about hour. Stir in basil during last few minutes. Toss with cooked pasta!! Nothing better for a summer meal!!
Pros: Quick, Healthy, Will Make Again

Made A Similar Recipe

I recently made a recipe like this for a potluck, and it was fantastic. There were a couple of differences. Combine tomatoes, basil, oil, salt & pepper, and two garlic clove, minced. Put in fridge for 2 hours to combine flavors. I used tri-color rotini. Then add to cooled pasta. Sprinkle with 1/2 Cup fresh grated Parmesan cheese and garnish with more basil. Yum!!

What a great recipe when you have ripe tomatoes. Yum! My children even gobble this up.
